Nat Cool is naturally “cool and funky”. It represents an innovative concept initiated by Niepoort, in which various producers came together to create light and easy-to-drink wines. In the Bairrada region we have produced the Drink Me, the first Nat Cool, where we try to showcase a different and elegant side of the Baga grape variety. An incredibly light and accessible wine which just begs to be enjoyed. Welcome to the Nat Cool world!

Vinification

2016 presented us with a temperate and quite dry Winter, with higher rainfall occuring in April and May, which necessitated rigorous vineyard work. The following months brought high temperatures and allowed the fruit to ripen evenly. We began checking the grapes for ripeness at the beginning of August, and we noted that ripening was delayed and that the harvest would also begin later than in the previous year. Harvest started on 6 September and ended on 28 September, with a reduction in yield of around 30 to 35%.

The Nat Cool 2016 stems from various old vineyard blocks and was fermented in stainless steel for 5 weeks, with carbonic maceration. After undergoing malolactic fermentation and some ageing in these stainless steel tanks, the wine was bottled unfiltered.

Tasting Notes

Light in colour, the 2016 displays delicate fruit aromas, freshness and plenty of expression. The individuality of the Baga grape variety and the Bairrada region shine through clearly, with red fruits, some spice and a mineral undertone which reflects the lime-rich soils and the distinctly Atlantic climate. Fresh, truly enticing and full of precision, this is a wine which is light on its feet and easy to enjoy. It downright invites you to pour another glass! It is an incredibly versatile food partner – all you need for a successful pairing is a table and friends. Serve chilled. Naturally cool, pure pleasure!

Vinification

Winter 2016/2017 in Bairrada was very dry. Spring saw some precipitation at the end of April and beginning May, but a very dry Summer followed. The low levels of humidity reduced the risk of disease to practically zero and therefore also eliminated the need for vine treatments. Due to the extremely hot and dry conditions, the fruit ripened very quickly. Harvesting began 3 weeks earlier than in the previous year, beginning on 17 August and ending on 19 September.

It was a good vintage, with the wines showing more intense colour and higher alcohol contents than in the previous year, but with very balanced acidity. The Nat Cool 2017 stems from various old vineyard blocks and was fermented in stainless steel for 5 weeks. After undergoing malolactic fermentation and some ageing in these stainless steel tanks, the wine was bottled unfiltered.

Tasting Notes

Light in colour, the 2017 has a very fruity character, but with more freshness and floral notes than the first vintage of this wine. The individuality of the Baga grape variety and the Bairrada region shine through clearly, with red fruits, some spice and a mineral undertone which reflects the lime-rich soils and the distinctly Atlantic climate. Vinification

“The 2018 vintage proved to be a difficult one due to high rainfall occurring between the months of January and May, which led to low fruit set but good quality fruit. In these weather conditions, it was extremely important to implement preventative treatments. The summer brought high temperatures which, together with the abundant water reserves in the soil, allowed the grapes to mature beautifully.

The harvest began with the white wine grapes on 27 August and concluded with the red varieties on 5 October, making full use of the hot and dry days.

Despite the aforementioned challenges of 2018, the general outcome was clearly positive. The wines show balanced acidity and intense colour. August’s and September’s high temperatures increased the alcohol levels slightly, but our Quinta de Baixo wines maintained their freshness and elegance.”

Tasting Notes

The 2018 vintage of this wine is light in colour and offers a frank and expressive aromatic profile full of freshness and floral notes. It showcases the character of the Baga grape variety and Bairrada region superbly, with beautiful aromas of strawberries, dried roses and some spice. These notes are embedded in a minerality reminiscent of the vines’ calcareous soils and unmistakeable Atlantic climate. Fresh, direct and very seductive, this wine is light on its feet and so easy to drink, it will entice you to have another glass. However, thanks to a warm spring, the grapes matured quickly, leading to an earlier harvest.

Picking began with the white grape varieties on 26 August and ended with the reds on 26 September. It was a good year, with well-balanced acidities. Although alcohol levels were higher than the previous year, we were able to maintain the freshness and elegance that characterise the wines of the Quinta de Baixo.

The NAT COOL 2019 is produced from various old vineyard sites. It was vinified in stainless steel tanks, where the wine fermented for 5 weeks, before undergoing malolactic fermentation and an ageing period in these same tanks. The wine was bottled unfiltered.

The 2021 vintage saw some unexpected rain showers which made it more challenging to control disease pressure. Despite this, we managed to maintain our vineyards’ good health.

Spring brought some spikes in temperature, which meant that our grapes ripened earlier and that the harvest was brought forward.

Harvesting began with our white wine grapes, on 26 August, and concluded with the reds on 26 September.

It was a good year, characterised by balanced acidity, intense colour and lower alcohol levels compared to the previous vintage. This year, the Quinta de Baixo wines shine with elegance and freshness.

The NAT COOL 2021 is produced from various old vineyard sites. It was vinified in stainless steel tanks, where the wine fermented for 5 weeks, before undergoing malolactic fermentation and an ageing period in these same tanks. The wine was bottled unfiltered.

Tasting Notes

Light and lively in colour, this wine offers a bouquet which closely reflects the character of the Baga grape variety as well as the Bairrada region: fresh, floral, with notes of aromatic herbs and red fruit. On the palate, it is round yet light and crisp. It finishes on an almost piquant note, with a slight astringency that lends the wine even more personality. This is an uncomplicated wine suitable for any occasion.
