The dream of producing wines in Dão began in 2012. Since then, we sought for vines, some of them very old, that would express the unique character of this region, where the highlands microclimate and the granite soils have always gave genuine wines. In Dão Rótulo first edition we obtained a fresh and light, but authentic wine.

Vinification

The harvest occurred in early September. The grapes represent, for the most part, vines from 20 to 50 years old, and the main varieties are Alfrocheiro, Jaen and Touriga Nacional. After a strict selection, the wine aged during 22 months in cement vats. It was bottled without clarification or filtration, being normal,thus, the appearance of crystals after some years of ageing. This wine was bottled on 4 August 2014.

Tasting Notes

Ruby colour with good concentration. The aroma is very elegant, slightly floral, with wild fruit notes and some mentholated. In the mouth, shows its liveliness and acidity. The fresh fruit and the spices flavours are involved by a refreshing mineral profile. It presents a good volume in the mouth, without being heavy, giving a scented, long and very balanced finish.

The second edition of Rótulo continues the line of producing fresh, light wines with a traditional profile, and very gastronomic.

Our dream of starting the production of great wines in Dão began in 2012. Since then, we sought for some vines (some of them very old) that would express the unique character of the Dão region, where the highlands microclimate and the granite soils have always given us genuine wines.

Vinification

The wine was harvested in mid-September. The grapes come from vines, for the most part, from 30 to 60 years old, and the main varieties are Alfrocheiro, Jaen and Touriga Nacional. After a strict selection, this wine was vinified in stainless steel vats and aged during 22 months in cement vats. It was bottled, with a minimum of clarification techniques, being natural the appearance of crystals after some years of ageing. This wine was bottled on 26 March 2015.

Tasting Notes

Concentrated ruby colour. The aroma is elegant, with black fruit, floral aromas and balsamic profile. With more vigor than its predecessor, but also with greater mouth volume, maintains a mineral profile and with notes of spices, very common in the classic wines of Dão. The ageing in cement provides a very fresh and elegant finish, without being heavy, but with good persistence.

Vinification

Harvest began in mid-September. The grapes come mostly from vines, with 30 to 60 years old, where the main varieties are Alfrocheiro, Jaen and Touriga Nacional. After a careful selection, this wine was vinified in stainless steel vats and aged during 12 months in cement vats. It was bottled, with a minimum of clarification techniques, therefore it is possible the appearance of crystals after some years of ageing.

Tasting Notes

Medium concentration ruby colour. As the previous editions, the aroma is elegant, with black fruit, spices, reminding black pepper, floral notes, and a balsamic profile. With a good volume in the mouth, shows a mineral profile, full of wild fruit and spice notes, very common in the Dão classic wines. The acidity is in perfect harmony with the fresh fruit. The ageing in cement vats provides a very fresh and elegant finish with good persistence. Given its profile and youth, we recommend to be served at a temperature of approximately 15 °C.

Our dream to create Dão wines dates back to 2012. Since then we have been procuring vineyard blocks – including some very old sites – which express the unique character of the region. Its mountainous microclimate and granitic soils have been the birthplace of great wines for a very long time.

Vinification

2016 experienced a mild winter and a spring with very high rainfall and humidity which lasted through to the beginning of summer. Despite the disease pressure that these weather conditions exert on the vines, the vines remained completely undamaged thanks to our biodynamic practices and the resulting increased resistance to disease.

Due to the weather conditions and the delay in the vines’ growth cycle and maturation process, the harvest was somewhat delayed and only started on 12 September. However, the rain stayed away during the harvest period, which improved the concentration and health of the fruit.

The wine fermented in stainless steel tanks, with a long maceration period but no excessive extraction.

This year gave us optimal acid levels and alcohol contents between 11.5% and 13%, which allowed us to craft an elegant wine which, after alcoholic fermentation, matured in cement tanks and was bottled completely unfiltered.

Tasting Notes

The wine boasts a beautiful ruby hue of medium intensity. The similarity between this Rótulo and its previous vintages lies in the fine, fruity aromas with notes of black fruit, hints of spice (especially black pepper) as well as floral and balsamic nuances. This medium-bodied wine has a mineral and distinctly elegant profile where fruits of the forest and spicy notes take centre stage, and acidity and fruitiness balance each other out perfectly. The ageing period on cement tanks lends the wine a refreshing, elegant and lasting finish. Its character and youth require a serving temperature of around 15°C.

Vinification

The 2017 viticultural year experienced a dry winter, with much lower rainfall than the average in the past 30 years. A hot and dry spring followed, with heat waves which persisted to the beginning of summer. With the increase of average temperatures and the lack of rainfall, we have seen an advance of about 2 weeks in the vines’ vegetative cycle, from budbreak to veraison.

This situation carried on through summer, leading to an early start to a harvest that proved to be particularly intense and short.

The wine fermented in stainless steel tanks, with a long maceration period but no excessive extraction.

Tasting Notes

The wine presents a light ruby red colour, elegant aromas, freshness and fruit. On the palate, minerality and great finesse come to the fore, with predominant notes of fruits of the forest and aromas typical of the terroir. Its beautiful acidity balances out the wine’s fruit. Its ageing period in cement tanks lends the finish plenty of freshness, finesse and length. As this is a youthful wine, we recommend serving it slightly chilled at 15°C /16°C.

Vinification

2018 posed us some challenges with its weather conditions during the first part of the year, leading to an inevitable reduction in yields obtained during harvest.

Despite a rainy start to the year, summer was hot and quite dry, which allowed the grapes to ripen nicely, therefore providing us with fruit of promising quality.

After preventatively treating the vines, we began the harvest with the white wine grapes on 3 September and concluded the harvest with the last reds on 10 October.

In spite of the aforementioned reduced yields, we obtained fruit of mostly remarkable quality, with the wines showing balanced acidity levels and slightly higher alcohol contents.

The wine was fermented in stainless steel tanks, with a longer maceration period and very little extraction. After completing the alcoholic fermentation process, the wine was aged in cement tanks and then eventually bottled unfiltered.

Tasting Notes

A straight-forward wine which echoes the freshness and versatility of the sub-region Gouveia on the slopes of the Serra da Estrela Mountain.

Its light hue presents some of the brick-red tinges typical of the grape varieties that make up this blend.

The nose offers notes of tobacco, red fruit and minty nuances which lend the wine freshness and further complexity.

On the palate, a beautiful acidity and some roundness translate to elegance.

As this is a delicate wine with a youthful profile, it is best served chilled.

Vinification

The 2019 vintage was a very balanced year in the Dão. Much like in the Bairrada region, the incidence of disease was very low and there was almost no need to treat the vines. The dry and extremely hot conditions in the summer caused the grapes to ripen early: harvesting began on 28 August and ended on 29 September.

In our opinion, it was a good year, with balanced acidity and more colour intensity than usual. Fermentation occurred as expected, with slightly higher alcohol levels that in previous vintages, without however compromising the freshness and elegance of the wines in general.
