Quinta de Baixo Vinhas Velhas is the result of combining the varieties Maria Gomes and Bical from century-old vineyards with a perfect limestone terroir. Due to the high natural acidity, these vineyards give rise to wines with a pH below 3.0, which makes possible the malolactic fermentation that occurs in 1000 litres Fuders over 60 years old, from Mosel. VV represents the incredible lightness and complexity of Bairrada.
- Vinification
2013 was a wet year, with rain during the winter and spring. As a result, the growth occurred two weeks later than the previous year and the whole growing cycle was delayed. The summer was not as hot as usual and the nights were very cold in the last two weeks of August.
The harvest began in late August in old vines. The ripening was very balanced, with a good sugar content in grapes and a relatively high content of malic acid, having given good pHs to the wine, resulting in a total acidity higher than in the previous year. The white wines are balanced and with good freshness.
The V/V white 2013 comes from several parcels of old vines. It was vinified in stainless steel vat, where fermented for 4 weeks and ended the fermentation in Fuders. The malolactic occurred in 1000L used Fuders, where the wine aged for 20 months. It was bottled without filtration.
- Tasting Notes
Crystalline in colour, the chalk notes are superb, in a vibrant way, almost nervous, expressive and very austere. Its mineral profile is involved by good lemon notes and white flowers. In the mouth, is remarkably light, while full-bodied, with extract. The citrus acidity brings the wine to a single, fresh, complex, very fine, and elegant level. Vertical, direct and with an austere and deeply mineral finish. A very serious and distinct white, that should be drunk in Burgundy type glasses.

- Vinification
As in 2013, the winter in Bairrada was severe, long and with heavy rainfall. An almost non-existing spring and a summer with temperatures around 30°C, made difficult the disease control and the ripening.
Ripening control began in mid-August, tasting and checking the grapes. The harvest of the whites began on the 28th August in excellent weather conditions, and finished on the 10th September. The VV 2014 was vinified in stainless steel vats, where it fermented for 4 weeks, ending the fermentation in Fuders. The malolactic occurred in the same 1000L used Fuders, where the wine aged for 20 months. It was bottled without filtration.
- Tasting Notes
Lighter in colour than the previous edition, it is vibrant, expressive and austere. The limestone notes are very obvious, enveloped by lemon, spices and white flowers aromas. The austere and mineral profile of Bical is more pronounced than the expressive character of Maria Gomes. In the mouth is remarkably light, while full-bodied, and with great vigour. The acidity brings the wine to a single, fresh, complex, very fine, and elegant level. Direct and with an austere and deeply mineral finish, is a very distinct white that should be drunk in Burgundy glasses.

- Vinification
2015 was a wet year, with rainfall in winter and spring. As a result, budburst occurred 15 days later than the previous year and the growth cycle was delayed. Summer was not as hot as usual, and the nights were relatively cool in the last 2 weeks of August.
The harvest began towards the end of August, in the old vineyards whose vines showed very even ripeness, with good sugar levels and relatively high malic acid levels in the fruit, which resulted in favourable pH levels and a higher total acidity than in the previous vintage. The wine fermented in stainless steel tanks for 4 weeks and then completed its fermentation in 1000L fuders, which is where it also went through malolactic fermentation and a maturation period of 20 months. The wine was bottled unfiltered.
- Tasting Notes
Light lemon yellow in appearance, this wine offers its usual vibrant and expressive nose, which is however still relatively closed. Its chalky notes are already quite marked and enveloped by aromas of citrus, herbs and white blossoms. In this fruit-forward vintage, the austere and mineral character of the Bical grape variety provides the perfect counterbalance to the expressive Maria Gomes variety. On the palate, the wine offers an impressive light touch without compromising its full body and strong grip. The acidity elevates this wine to a whole new level of freshness, complexity, elegance and finesse. The finish is deeply mineral, with flavours of dried fruit –thanks to the long and gentle maturation period in the large wooden Fuders. This is a serious and individual white wine which is best enjoyed in a Burgundy wine glass.

- Vinification
In the Bairrada region, the growing year experienced a mild and relatively dry winter, followed by a spring with high rainfall. The rains during the months of April and May forced us to closely monitor the vineyards and intervene more intensely in the vineyards. The high temperatures of the following months allowed the grapes to ripen evenly.
We began testing for ripeness in the first days of August, and discovered that there was a delay in berry maturation, which would lead to a later harvest. The harvest, which began on 6 September, occurred approximately one week later compared to the previous year.
We finished harvesting on 28 September. Yields were down by around 30% - 35%. Despite these difficult conditions, the fruit maintained an excellent level of quality.
Overall, 2016 was a good year, with optimal acidity levels and alcohols between 11.5% and 12.5% vol. As a result, we were able to produce fine and elegant wines with slightly deeper colours and outstanding potential. Ageing took place in large fuders and wooden barrels.
- Tasting Notes
Pale lemon in colour, the wine offers its usual vibrant profile, with a lot of tension and expressive aromas while at the same time remaining relatively austere. The mineral notes from the calcareous soils come through very distinctly, with an excellent balance between its fresh herbal aromas and notes of lime. A vintage such as 2016 showcases the austere and mineral profile of the Bical variety, perfectly balanced by the expressive nature of the Maria Gomes grape. On the palate, the wine impresses with its lightness, yet it still boasts body with plenty of grip. The acidity and salinity are to thank for this wine’s unique character full of freshness, finesse and elegance. A linear, profoundly serious and distinctive white wine with an austere and deeply mineral finish, best enjoyed out of a Burgundy wine glass.

- Vinification
Winter 2016/2017 in Bairrada was very dry. Spring saw some precipitation at the end of April and beginning May, but a very dry Summer followed. The low levels of humidity reduced the risk of disease to practically zero and therefore also eliminated the need for vine treatments. Due to the extremely hot and dry conditions, the fruit ripened very quickly. Harvesting began 3 weeks earlier than in the previous year, beginning on 17 August and ending on 19 September.
It was a good vintage, with the wines showing higher alcohol contents than in the previous year, but with very balanced acidity.
- Tasting Notes
Light lemon in colour, with its usual vibrant, expressive but austere character, this wine really emphasises its mineral notes from the calcareous soils, harmonising with aromas of fresh herbs, limes and white blossoms. The austere and mineral-driven character of the Bical grape variety is complemented by the expressivity of the Maria Gomes grapes. On the palate, an impressive lightness offers, nevertheless, good body and plenty of grip. Its acidity and saline notes lift this wine, lending it a unique character full of freshness and elegance. The Vinhas Velhas is a linear, direct wine with an austere and profoundly mineral finish. This serious, extraordinary white wine should be enjoyed in a Burgundy glass.

- Vinification
The 2018 vintage proved to be a difficult one due to high rainfall occurring between the months of January and May, which led to low fruit set but good quality fruit. In these weather conditions, it was extremely important to implement preventative treatments. The summer brought high temperatures which, together with the abundant water reserves in the soil, allowed the grapes to mature beautifully.
Despite the aforementioned challenges of 2018, the general outcome was clearly positive.
The VV fermented in stainless steel tanks for 4/5 weeks and then completed its fermentation in 1000L fuders, which is where it also went through malolactic fermentation and a maturation period of 20 months. The wine was bottled unfiltered.
- Tasting Notes
This VV 2018 was produced from the characteristic old vineyards of Bairrada, where the soils are mainly composed of limestone.
The Bairrada’s small plots are often compared to the great white wines of Burgundy.
The wine’s appearance shows brilliant lemon hues.
A discreet nose reveals aromas of citrus, apricots, nuts as well as floral notes and hints of fresh herbs which lend the wine complexity and sophistication.
This is a serious and individual white wine. Most impressive is its palate, which offers incredible structure, elegance, acidity and a saline character that immediately makes us think of the limestone soils of the Bairrada. The finish is long, lingering on the palate with some final spicy nuances.

2019 was a year with some rainfall and an intensely cold March, which resulted in slow growth.
However, thanks to a warm spring, the grapes matured quickly, leading to an earlier harvest.
Picking began with the white grape varieties on 26 August and ended with the reds on 26 September. It was a good year, with well-balanced acidities. Although alcohol levels were higher than the previous year, we were able to maintain the freshness and elegance that characterise the wines of the Quinta de Baixo.
- Tasting Notes
This wine boasts a bright and light lemon yellow appearance, similar to the 2018 vintage.
Its nose is discreet, with notes of hazelnut, citrus, and apricot as well as floral and vegetal aromas which add to the wine’s complexity and sophistication.
This is a serious and unique white wine that impresses the most with its palate: great structure, elegance, outstanding acidity and a saline character which brings us right back to the limestone soils of the Bairrada.
Its finish is long, lingering and full of spice.
